The New Nordic Kitchen Manifesto in 2004, kickstarted a revolution in Danish gastronomy and with Noma as a frontrunner, chefs across the Nordic countries begun exploring the uniqueness of food native to the Nordic region. During this week we will on a basis of local, lollandic seasonal produce of the best quality explore the flavors and techniques iconic to the New Nordic Cuisine.

The course will take place at Hotel Saxkjøbing and be a week in the spirit of the danish folk high school with singing, time to reflexion and 'hygge' .

The program is a mix of time in the kitchen, excursions and lectures, and
